A HOT TODDY is a Soothing Tonic of Hot Water, Spices, Whiskey, and Honey. A favorite winter warmer, the hot toddy is sipped as a soothing tonic before bedtime, or as relief to cold, wet weather. It was named for the toddy drink in India, created from a drink of the toddy palm, then carried to Scotland by the East India Company as a hot whiskey drink of water, honey, herbs, and spices.
For a Single Serving: Fill spice bag with 1 tablespoon spices. Add spice bag and 1 cup boiling water to a glass tumbler. Steep spices 5 minutes, then remove spice bag. Add 1 teaspoon honey. Stir in 2 ounces of whiskey, rum, or brandy. Top off the glass with boiling water, serving steaming hot with a cinnamon stick.
SANGRIA has grown from its humble roots in Spain and Portugal to become a popular party drink the world over. Typically it is created from red wine, spices, and cut fruit, but recipes vary widely. Sangria is based on traditional wine punch served across Europe for hundreds of years, beginning in the Middle Ages.
WASSAIL (Middle English 'wæs hæl' - ‘be you healthy’) refers both to the salute 'Waes Hail' and to the drink of wassail, a hot mulled cider drunk as part of wassailing, an English ritual intended to ensure a good apple harvest the following year. Historically, the drink is a mulled cider, mulled beer, or mead, made with sugar, cinnamon, ginger, and nutmeg and topped with toast. A group then sings: “Old Apple tree, old apple tree, we've come to wassail thee, To bear and to bow apples enow, Hats full, caps full, three bushel bags full, Barn floors full and a little heap under the stairs.”
Brewing: For a Gallon Brew: Fill a pot with 1 gallon of red wine or port. Mix in orange peel, ginger, cinnamon, cloves, and allspice. Add ½ cup sugar, and simmer at low heat for 1-2 hours. Strain, then serve hot, topping each cup with a slice of toast.
